On Level 3, the Tatenokawa Exclusive Counter presents exclusive Tatenokawa labels, available by the glass, bottle, or as part of an innovative cocktail menu.

NICKY TAN
Chef Nicky leads Tensei’s kitchen with over 14 years of experience in Japanese cuisine. Trained in Kappo-style dining and formerly Head Chef of the acclaimed Sakutto Tempura and Oyster Bar, he now brings his expertise to a bold yet refined menu that celebrates Tempura while drawing inspiration from Tatenokawa and Xijiu. The result is a distinctive dining experience, perfectly paired with premium sake and elegant Xijiu.

Jason began his hospitality journey as front-of-house in a Japanese ramen restaurant before discovering his passion for bartending, where he mastered the art of cocktail creation. His curiosity and dedication led him to explore every aspect of the industry—from managing restaurants to stepping into the kitchen, where he rose to Head Chef. With over 15 years of experience across both front and back of house, Jason brings a rare, well-rounded perspective and a deep understanding of hospitality to Tensei.
